Attractively labeled as “dehydrated turkey flavor” in Canada at up to a 1.00% level of use, our dried turkey collagen is the first of its kind in the meat and poultry business. Available in two versions that offer different levels of granulation and suitable for injection, our material delivers a mild turkey flavor as well as host of functional benefits to whole muscle and processed turkey products. These benefits include increased brine retention, reduced storage purge, improved processing and slicing yields, and enhanced product texture.
Applications include injected poultry (ideal for whole muscle applications), coarse ground sausage, turkey nuggets and patties, fermented sausage poultry marinades and more. The product is also well-suited to low-fat and low-sodium applications.
